How Matcha is Made

Producing authentic matcha is an art form that takes time, precision, and devotion.

  1. Shade-Growing — Tea plants are shaded for 25–30 days before harvest to deepen color, boost chlorophyll and enhance sweetness.
  2. Selective Harvesting — First harvest (Ichibancha, late April–May) produces the most tender leaves; second harvest (Nibancha, June–July) for culinary blends.
  3. Steaming & Drying — Stops oxidation, preserves color and nutrients, dried as Aracha.
  4. De-stemming & De-veining — Removes stems/veins, leaving Tencha flakes.
  5. Aging — Gentle aging (Kuradashi) creates rounder, richer flavor.
  6. Stone Grinding — Slow granite milling (ishi-usu) produces silky matcha powder.
